This recipe is a childhood favorite and brings back fond memories of my mother making 'puffers' for us as we sat in front of the oven anxiously waiting for them to begin to puff.
  • 2 eggs
  • ½ cup flour
  • ½ cup milk
  • 1 Tablespoon of butter
  1. Preheat oven to 425 degrees
  2. Mix eggs, flour and milk together in a mixing bowl. Mixture will be lumpy.
  3. Melt 1 Tablespoon of butter in an 8X8 baking dish
  4. Pour mixture into the melted butter and bake at 425 for 20 minutes.
  5. Remove and serve immediately as they will begin to deflate as they cool.
Be sure you have the oven rack in the middle as these ‘puff’ up quite a bit.
If you double the batch they will be thicker pancakes and take a couple extra minutes to bake. You can also double or triple this recipe and bake them in a 9X13 pan.
